Pumpkin chocolate chip muffins



One of my most favorite fall treats is these pumpkin chocolate chip muffins I discovered last year via Darby (the photo above is hers!). They're not particularly impressive in the culinary department, but they are delicious and incredibly easy to make. Ready for the recipe? One Betty Crocker chocolate chip muffin pouch + 1/4 cup of pure pumpkin puree (I like Libby's) + 1/2 cup of water - 4 Tbs. of water + a healthy dash of cinnamon. Mix together and bake in a 400 degree oven! (I do 12 minutes for the mini muffin size!)

Bacon + avocado grilled cheese



Guess what we had for dinner two nights ago? Yup, bacon grilled cheese. Also with mashed avocado, thin Granny Smith apple slices, and a little bit of onion. SO GOOD.

Black Bean Mexican Pizza



I thought we might end the week with this absolutely delicious recipe for Black Bean Pizza. John made it for the first time a few weeks ago, and it's been a menu staple ever since! Hint: don't leave out the limes -- they add a crucial flavor kick.

Black Bean Soup with Cumin and Jalapeno

How about a quick, easy, and DELICIOUS recipe for you on this fine Tuesday? It's no secret that J does all of the cooking in our house, but we both love this soup from Epicurious. Perfect for winter nights! P.S. Despite the name, it's really not too fiery!

Ingredients
2 tablespoons olive oil
1 onion, chopped
1 carrot, chopped
4 garlic cloves, chopped
2 teaspoons ground cumin
1-2 teaspoons chopped jalapeno chile with seeds, divided
2 15-16 oz cans black beans, undrained
1 15-oz can petite diced tomatoes in juice
1 1/2 cups low-sodium chicken broth

Chopped fresh cilantro
Chopped green onions
Crumbled feta cheese

Directions
Heat oil in heavy large pot over medium-high heat. Add onion, carrot, and garlic; saute until vegetables begin to soften, about 6 minutes. Mix in cumin and 1 teaspoon jalapeno. Add beans, tomatoes with juice, and broth; bring soup to boil. Reduce heat to medium, cover, and cook until carrots are tender, about 15 minutes. Transfer 3 cups of soup to blender and puree until smooth. Return puree to pot. Simmer soup until slightly thickened, about 15 minutes. Season to taste with salt, pepper, and remaining 1 teaspoon jalapeno, if desired.

Ladle soup into bowls. Pass cilantro, green onions, and feta cheese separately. (The feta and black beans are such a delicious combination!)

As you can see, the Grilled Veggie Sandwiches were the hit of the week! They will definitely be added in to our regular repertoire.

Side note: Can you tell we like bread? Seriously. We buy it loaves at a time, then slice and freeze it in plastic bags so that we always have some on hand. Bread is very important to us.

Overall, I think this goal did exactly what I was hoping it would: we looked up some new recipes, tried them out, and found a few to add to our regular roster. Success!

Wedding weekend brunch: the recipes



Our menu was as follows:


Chocolate raspberry muffins (Recipe here. These are amazing! Make them tonight if you can.)
Banana bread (Recipe here via That Wife.)
Sharp cheddar + Triscuits
Deviled eggs (I put lots of brown spicy mustard in them.)
Crudite
Sausage stars (Recipe below. Kind of a weird name but they are delicious!)
Red grapes
Cream cheese sugar cookies (Recipe here via inchmark.)
Raspberry lemonade with fresh mint
Orange juice

Sausage stars
1 pound cooked crumbled sausage
1 1/2 cups grated Monterey Jack
2 ounces chopped black olives
1 1/2 cups grated Cheddar
1/2 cup chopped red pepper
1 cup ranch dressing
wonton wrappers

Preheat oven to 350 F. Squeeze sausage dry. Combine sausage with all ingredients except wonton wrappers. Grease muffin tins. Place wrappers in tins; bake for 4 minutes. Remove from tins and fill. Bake on cookie sheet 4-6 minutes or until bubbly.

Mulled Cider



My family isn't getting in until 11pm or so tonight, and though I know we'll probably all want to go to bed pretty quickly, I also know we'll likely end up staying awake and chatting for at least a little bit. My plan is to have mulled cider simmering on the stove when we return from the airport, filling the apartment with its amazing fragrance and ready to ladle into mugs. Doesn't that sound delightful and oh-so-fall? Here's the recipe I'm using, from Martha:

Mulled Cider
(Serves 8)

2 quarts apple cider (8 cups)
4 strips lemon zest
2 cinnamon sticks
2 whole star anise (optional - we won't be including as we haven't been able to find them)
1 teaspoon whole allspice berries
1 teaspoon whole cloves

In a large saucepan, bring cider, lemon zest, and spices to a boil; cover, and remove from heat. Let steep at least 20 minutes (or up to 4 hours). Ladle carefully into mugs, leaving most of the solids behind.

P.S. I might have to make this for someone as a Christmas gift. Too cute!

Chocolate Raspberry Tea Cakes



I clipped this recipe out of my local newspaper years and years ago, so I have no idea who to credit it to, but it is a firm favorite among my family and friends. As a matter of fact, I'm going to go out on a limb and say this will be the most delicious muffin you will ever taste. They also pack and keep exceptionally well.

Ingredients:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter or margarine, melted
- 1/2 cup milk
- 1 egg
- 2 cups (one 11-ounce package) milk chocolate chips
- 1/3 cup red raspberry preserves

Heat oven to 350 F. Line 12 muffin cups with paper baking cups. In a large bowl, stir together flour, sugars, baking powder and salt. In a small bowl, combine butter, milk, and egg. Add to flour mixture and stir just until combined. Stir in milk chocolate chips. Spoon half of batter into 12 muffin cups. Spoon a small dollop of raspberry preserves into each muffin cup; top with remaining batter. Bake for 20-25 minutes, or until golden brown.

Martha's Butterscotch-Pecan Cake



A few weeks ago, I attempted my first Martha Stewart layer cake, the Butterscotch-Pecan from her November 2008 Living issue. While beautiful to look at, it was intensely buttery and sugary - too much so for my audience's taste. For a relatively novice cook, it was also incredibly time-consuming and used just about every bowl in my kitchen. It was certainly an experience to make, however, so if you're looking for a recipe that will make an impact on the table, this is a great one to try.



Serves 12 to 14

Ingredients for the cakes:
--vegetable oil or cooking spray, for pans
--3 3/4 cups all-purpose flour
--1 1/4 teaspoons baking powder
--3/4 teaspoon baking soda
--2 1/2 teaspoons coarse salt
--10 ounces (2 1/2 sticks) unsalted butter, softened
--2 1/2 cups packed dark-brown sugar
--4 large eggs, room temperature
--1 tablespoon plus 1 teaspoon pure vanilla extract
--1 1/4 teaspoons rum, preferably golden or dark
--1 1/4 cups buttermilk, room temperature

Ingredients for the frosting
--12 ounces unsalted butter (3 sticks), 1 stick left whole, 2 sticks cut into small pieces, softened
--2 cups packed dark-brown sugar
--1 cup heavy cream
--1/2 teaspoon coarse salt
--20 ounces cream cheese, softened
--1/2 cup confectioner's sugar, sifted

Ingredients for the butterscotch sauce
--2/3 cup packed dark-brown sugar
--3 ounces (6 tablespoons) butter, cut into pieces
--1/2 cup light corn syrup
--1/4 teaspoon coarse salt
--1/2 cup heavy cream
--2 cups pecan halves, toasted and chopped, plus more halves for garnish



1. Make the cakes: Preheat oven to 325 F. Coat three 8-by-2-inch round cake pans with cooking spray, line with parchment, and coat parchment. Whisk flour, baking powder, baking soda, and salt in a medium bowl.

2. Beat butter and brown sugar with a mixer on medium-high speed until pale and fluffy, about 5 minutes. Beat in eggs, 1 at a time, beating well after each addition, then add vanilla and rum. Reduce speed to low. Add flour mixture in 2 additions, alternating with buttermilk. Raise speed to medium-high, and beat for 2 minutes. Divide batter among pans.

3. Bake cakes until golden brown and testers inserted in centers come out clean, about 40 minutes. Transfer pans to wire racks, and let cool slightly. Invert cakes onto racks. Let cool.

4. Make the frosting: Melt 1 stick butter in a medium saucepan over medium heat until dark golden brown, about 10 minutes. Add brown sugar, cream, and salt, stirring until sugar dissolves. Bring to a boil, whisking constantly, and cook for three minutes. Transfer to a mixer bowl, and let cool.

5. With machine running, add remaining butter, a few pieces at a time, and beat on low until incorporated. Raise speed to medium, and beat for 2 minutes. In another bowl, beat cream cheese and confectioner's sugar on medium-high until fluffy and smooth, about 3 minutes. Add brown-butter mixture to cream cheese, and beat until smooth. Cover, and refrigerate until chilled, at least 2 hours (or overnight, beating on low speed before using).

6. Make the butterscotch sauce: Mix sugar, butter, corn syrup, and salt in a small saucepan over medium heat, and cook, stirring, until sugar dissolves. Bring to a boil, and cook for 2 minutes. Remove from heat, and whisk in cream. Return to heat, and cook for 2 minutes. Let cool slightly.

7. To assemble the cake: Trim tops of 2 cake layers and top and bottom of third (this will be the middle) to create flat exposed surfaces. Brush 1/4 cup plus 2 tablespoons butterscotch sauce on cut sides. Let cool. Spread 1 cup frosting on 1 layer, then place middle layer on top, sauce side down. Spread 1 cup frosting on middle layer, then place third layer on top, sauce side down. Spread 1 cup frosting on top and sides. Refrigerate until firm, about 1 hour.

8. Using an offset spatula, spread remaining frosting on top and sides of cake. Press chopped pecans on sides, and garnish top with halves. Transfer cake to a serving plate or cake stand. Refrigerate until firm, at least 4 hours (or up to 2 days, covered).

Molten Chocolate Babycakes

You already know I love Nigella, and her babycakes are another can't-miss recipe. As proof, I offer our experience making them last night: because we were "cooking by committee," the mini crocks went ungreased and the oven was somehow set for 200 F instead of 400 F (as the recipe calls for). Despite this, they still came out delicious!

These are also perfect to make for a dinner party, as you can fill the crocks beforehand then refrigerate them until you're ready for dessert. Make sure you have some vanilla ice cream on hand to cut the intense chocolate-ness, however, as these are not for the faint of heart.

Time: 25 minutes

1/4 cup unsalted butter, softened, plus more for greasing
12 ounces bittersweet chocolate
1/2 cup sugar
4 large eggs, beaten with a pinch of salt
1 tsp. vanilla extract
1/3 cup all-purpose flour
6 individual 6-ounce custard cups/mini baking crocks

Preheat the oven to 400 and put in a baking sheet at the same time. Lay 3 of the crocks on a sheet of doubled wax or parchment paper. Draw around them, remove, and then cut out the discs as marked. Press them into the base of the buttered crocks.

Melt the chocolate and let it cool slightly. Cream together the butter and sugar, and gradually beat in the eggs and salt, then the vanilla. Then add the flour until smooth and scrape in cooled chocolate, blending until smooth again.

Divide the batter between the 6 cups and place on the baking sheet that's already in the oven (it's best to remove the sheet briefly for this step). Bake for 10-12 minutes. As soon as you take them out of the oven, tip the babycakes onto small plates, add a scoop of vanilla ice cream, and serve.

Serves 6, but they're so rich they could easily be shared.

And a chocolate raspberry pavlova for dessert

I completely forgot to mention what we did with all those lovely berries!

I decided to use them in a Chocolate Raspberry Pavlova to help celebrate a friend's birthday on Monday. It's also J's favorite dessert, so he was happy with this decision!

It's a really easy recipe from Nigella, but it takes a while to bake and cool so there is a little forethought that must happen if you're interested in trying this one out. Believe me, the delayed gratification is so worth it -- this recipe is really a stunner in both looks and taste.

Nigella's Chocolate Raspberry Pavlova (slightly adapted from Forever Summer)

Ingredients:
6 egg whites
1 1/2 cups superfine sugar
3 Tbs. best quality cocoa powder, sieved
1 tsp. balsamic or red wine vinegar (I've used both with success)
2 ounces bittersweet chocolate, finely chopped
2 cups heavy cream
4 cups raspberries
2-3 Tbs. coarsely grated bittersweet chocolate

Preheat the oven to 350 and line a baking tray with wax paper.

Beat the egg whites until satiny peaks form, and then beat in the sugar a spoonful at a time until the meringue is stiff and shiny. Sprinkle over the cocoa, vinegar, and chopped chocolate. Then gently fold everything until the coca is thoroughly mixed in.

Mound on to a baking tray in a fat circle approximately 9 inches in diameter, smoothing the sides and top. Place in the oven, then immediately turn the temperature down to 300 and cook for about one to one quarter hour. When it's ready it should look crisp around the edges and on the sides and be dry on top, but when you prod the center you should feel the promise of squidginess. Turn off the oven and open the door slightly, and let the meringue cool completely.

When you're ready to serve, invert on to a big, flat-bottomed plate. Whisk the cream till thick but still soft and pile it on top of the meringue, then scatter over the raspberries and the chocolate shavings.

Serves 8-10 (but I've stretched it to 16 in a pinch).
